Research Opportunities
  • The research areas for the students of this department are,
  • Processing, manufacturing and evaluation of dairy/meat products.
  • Physical, chemical, nutritional, rheological, microbiological, structural and/or sensory quality of milk/meat products.
  • Slaughter house by product Technologies.

Research Activities

The research is mainly focused on the development of novel methods and analytical tools for the research in the areas of Dairy, Meat and allied sciences and technologies.
1. Standardization of cottage cheese making.
2. Physico-chemical composition of milk of different goat breeds of Sindh.
3. Isolation and typing of various strains of Streptococcus thermophilus and Lactobacillus bulgaricus from local dahi samples and their effects on various physico-chemical properties of milk during fermentation.
4. Preservation of fresh buffalo and cow milk by activation of lacto- peroxidase system.
